vSwitch proper configuration w/6 NICs

Hey folks,

Have recently upgrade two stand alone hosts(4.0 to 5.5.U2) with proper licensing (Standard w/vCenter server).  No shared storage (at this time).

By default, only one NIC is defined & one switch (vSwitch0). I am trying to figure out what the "normal" (standard, etc) way is to break these out with multiple vswitches, but I don't want to bring down the network.  I have 14 VM's currently running across the two hosts.

The network (so far) is flat with 192.168.100.x /24 network.

I am also looking at purchasing dual 10g NIC cards to insert into each machine. I wish to have some sort of FT running and/or be able to do vMotion on the separate NICs.

Suggestions?
